做(zuò )法:春(chūn )笋切成片(piàn )后加少(shǎo )许盐捞出后用清水浸泡,生姜切(qiē )片,葱(cōng )切(qiē )成段。锅(guō )烧(shāo )热(rè ),倒入2勺油,放入生姜、春笋(sǔn )、牛肉片、葱段翻炒1分(fèn )钟左右。再加(jiā )入生抽、老抽(chōu )、蚝油翻炒均匀(yún ),加入少量清水半掩住春笋(sǔn ),盖上锅(guō )盖大火煮开后转中火。煮(zhǔ )到水快熬干的时(shí )候加入盐,翻炒(chǎo )均匀稍收汁时盖上锅盖焖。
