做(zuò )法:春(chūn )笋切成片后加少(shǎo )许盐捞出后用清(qīng )水浸泡,生姜切片,葱切成段(duàn )。锅烧热,倒入2勺油,放入(rù )生姜、春笋(sǔn )、牛肉片、葱段翻炒1分(fèn )钟左(zuǒ )右。再加(jiā )入生抽、老抽、蚝油翻炒均匀,加(jiā )入少量清水(shuǐ )半掩住春笋,盖上(shàng )锅盖(gài )大火(huǒ )煮开后转中火。煮到水快熬干的时候加入盐(yán ),翻炒均匀稍(shāo )收汁时(shí )盖上锅盖(gài )焖。
