做(zuò )法:春笋切(qiē )成片(piàn )后加少(shǎo )许盐捞出后用清水(shuǐ )浸泡,生姜切片,葱切成段(duàn )。锅烧热(rè ),倒入2勺油,放入生姜、春笋(sǔn )、牛肉片、葱段翻炒1分钟左(zuǒ )右。再加(jiā )入生抽、老抽、蚝油翻炒均匀,加入少量(liàng )清(qīng )水半(bàn )掩住春(chūn )笋,盖上(shàng )锅盖大火煮开后转中火。煮到水快(kuài )熬(áo )干的时候加入盐,翻炒(chǎo )均匀稍收(shōu )汁时盖上锅盖焖。
