做法:春笋切成(chéng )片后加少许盐捞出后用清水浸(jìn )泡,生姜切片,葱切成段。锅烧热,倒入2勺(sháo )油,放入生姜(jiāng )、春笋、牛肉片(piàn )、葱段翻炒1分(fèn )钟左右。再加入生抽、老抽、蚝油翻炒(chǎo )均匀,加入少(shǎo )量清水半掩住春笋(sǔn ),盖上锅盖大火煮开后转(zhuǎn )中火(huǒ )。煮(zhǔ )到水(shuǐ )快熬(áo )干的时候加入盐,翻炒均匀(yún )稍收汁时(shí )盖上(shàng )锅(guō )盖焖。
