做法:春笋切成片(piàn )后加少许盐捞出后用清水浸泡(pào ),生(shēng )姜切(qiē )片,葱切成段。锅(guō )烧热,倒入2勺油,放入生姜、春笋、牛肉片(piàn )、葱段翻炒1分钟左右。再(zài )加入生抽(chōu )、老抽、蚝(háo )油翻炒均匀,加入少量清水(shuǐ )半掩住(zhù )春笋,盖上(shàng )锅(guō )盖(gài )大火煮开后转中火。煮到水快熬干的时候(hòu )加入盐(yán ),翻炒均匀稍收汁时盖上(shàng )锅盖(gài )焖。
