做法:春笋切成(chéng )片后加少许(xǔ )盐捞出后用清水浸泡,生姜切片(piàn ),葱切成段。锅烧热,倒入2勺(sháo )油,放(fàng )入生姜(jiāng )、春笋、牛肉片、葱段翻炒1分钟左(zuǒ )右。再加入生抽、老抽、蚝(háo )油翻(fān )炒(chǎo )均匀,加入少量清水半掩住春(chūn )笋(sǔn ),盖上锅盖大(dà )火煮开后转中火(huǒ )。煮到水快熬干的时候加入(rù )盐(yán ),翻(fān )炒均匀稍收汁(zhī )时(shí )盖(gài )上锅盖焖。
