做(zuò )法:春笋切成片后加少(shǎo )许盐捞出后用清水浸泡,生姜切片(piàn ),葱切成段。锅烧热,倒入2勺油,放入生姜、春笋、牛肉片、葱段翻炒1分钟左(zuǒ )右。再加(jiā )入生抽、老抽、蚝油翻(fān )炒均匀(yún ),加入少量(liàng )清水半掩住春笋(sǔn ),盖上(shàng )锅盖大火煮开后(hòu )转中火(huǒ )。煮到(dào )水快熬干的时候(hòu )加入盐,翻炒均匀稍收汁时(shí )盖上锅(guō )盖焖。
