做法:春笋切成(chéng )片后加少许盐捞出(chū )后用清水浸泡,生姜切片,葱(cōng )切(qiē )成段(duàn )。锅烧热,倒入(rù )2勺油,放入生姜、春笋、牛肉片、葱段翻炒1分钟(zhōng )左右。再加入(rù )生抽、老(lǎo )抽、蚝油(yóu )翻炒均匀,加入少量(liàng )清水半掩住春笋,盖上(shàng )锅盖(gài )大火煮开后(hòu )转中火。煮到水快熬干的时候(hòu )加(jiā )入(rù )盐,翻(fān )炒均匀稍收汁(zhī )时盖上锅盖焖。
