做法:春笋切成片(piàn )后(hòu )加(jiā )少许盐捞出(chū )后用清水浸泡,生姜切片(piàn ),葱切成段。锅烧热(rè ),倒入2勺油,放入(rù )生姜、春笋、牛肉片、葱段翻炒1分钟左右。再加入(rù )生抽、老抽(chōu )、蚝油翻炒均匀,加入少量清(qīng )水半掩住春笋,盖上锅盖大(dà )火煮开后转中火(huǒ )。煮(zhǔ )到(dào )水(shuǐ )快熬(áo )干的时候加入(rù )盐,翻炒均匀稍收汁时盖上(shàng )锅(guō )盖焖。
