做(zuò )法:春笋切成片后加少许盐捞(lāo )出后用清水浸泡,生姜切片,葱切成段。锅烧热,倒入2勺油,放入生姜、春笋、牛(niú )肉片、葱段翻炒(chǎo )1分(fèn )钟左右。再加入生抽(chōu )、老抽、蚝油翻(fān )炒均匀,加(jiā )入少量清水半(bàn )掩住春笋,盖上(shàng )锅盖(gài )大火(huǒ )煮(zhǔ )开后转中(zhōng )火。煮到水(shuǐ )快熬干的时(shí )候加(jiā )入(rù )盐,翻炒均匀稍收汁时盖上(shàng )锅盖焖。
