做法(fǎ ):春笋切成片后加少许(xǔ )盐(yán )捞出后用清水浸泡,生(shēng )姜切片,葱切成段。锅烧热,倒入2勺油,放(fàng )入生姜、春笋、牛肉片(piàn )、葱段翻(fān )炒(chǎo )1分(fèn )钟左右。再加入(rù )生抽、老抽(chōu )、蚝油翻(fān )炒均匀,加入(rù )少量清水(shuǐ )半掩住春笋,盖上锅盖大(dà )火煮开后转(zhuǎn )中火。煮到(dào )水快熬干的时(shí )候加入盐,翻炒均匀稍收汁时盖上锅盖焖(mèn )。
