做(zuò )法:春笋切成片后加少许盐捞出后用清水浸泡,生姜切片,葱切成段。锅烧(shāo )热,倒入2勺油(yóu ),放入生姜、春(chūn )笋、牛肉片、葱段(duàn )翻炒1分钟左右。再(zài )加入生(shēng )抽、老抽、蚝油(yóu )翻炒均匀,加入少量清水(shuǐ )半掩(yǎn )住春笋,盖(gài )上锅盖(gài )大火煮开后转中(zhōng )火。煮到水(shuǐ )快熬干的(de )时候加入盐(yán ),翻炒均匀稍(shāo )收汁时盖上锅(guō )盖焖。
