做法(fǎ ):春笋切成片后加少许盐捞出后(hòu )用清水(shuǐ )浸泡(pào ),生姜切片(piàn ),葱切成段(duàn )。锅烧热,倒入2勺油,放入生姜(jiāng )、春(chūn )笋、牛肉片、葱段翻炒(chǎo )1分钟左右。再(zài )加入生(shēng )抽、老抽、蚝油翻炒均匀,加入少量清水半(bàn )掩住(zhù )春笋,盖上锅盖大(dà )火煮开后转中火。煮到(dào )水快熬干的时候加入(rù )盐(yán ),翻炒均匀稍收(shōu )汁时(shí )盖上锅盖焖。
