做法:春笋切成片后加少(shǎo )许盐(yán )捞(lāo )出后用清(qīng )水(shuǐ )浸泡(pào ),生姜切(qiē )片,葱切成段。锅(guō )烧热,倒入2勺油,放(fàng )入(rù )生姜(jiāng )、春笋、牛肉片、葱段翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒均匀,加入(rù )少量(liàng )清水半掩住春(chūn )笋,盖上锅盖大火煮开后转中(zhōng )火。煮(zhǔ )到水快熬干的时候加入(rù )盐,翻炒均匀稍收汁时盖上锅(guō )盖焖。
