做(zuò )法:春(chūn )笋切成片后加少(shǎo )许盐捞出后用清水浸(jìn )泡,生姜切片,葱切成段。锅烧(shāo )热,倒入2勺油(yóu ),放入(rù )生(shēng )姜、春笋、牛肉片、葱段翻炒1分钟(zhōng )左右(yòu )。再加入生抽、老(lǎo )抽(chōu )、蚝油翻炒均匀,加入(rù )少量清水半(bàn )掩住春笋,盖上(shàng )锅盖大火煮开后转(zhuǎn )中火。煮到水快熬干的时(shí )候加入盐,翻炒均(jun1 )匀稍收汁时盖上(shàng )锅盖焖。
