做法:春笋切成片后加少许盐捞出(chū )后用(yòng )清水浸泡,生姜切片,葱切(qiē )成段。锅烧热(rè ),倒入(rù )2勺(sháo )油,放入生姜、春(chūn )笋、牛肉片、葱段翻炒1分钟左右。再加(jiā )入生抽、老抽、蚝油翻炒均匀,加入少量清水半掩住春笋,盖上锅(guō )盖大火煮开后转中(zhōng )火。煮到水快熬干(gàn )的时(shí )候加(jiā )入盐(yán ),翻炒均(jun1 )匀(yún )稍收汁时(shí )盖(gài )上锅(guō )盖焖。
