做(zuò )法:春笋切成(chéng )片后加少许盐捞出后用清水浸泡(pào ),生姜(jiāng )切片,葱切成段。锅(guō )烧(shāo )热,倒入2勺油,放入生(shēng )姜、春(chūn )笋、牛肉片、葱段翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒(chǎo )均匀,加入少量清水半掩(yǎn )住春笋,盖上锅(guō )盖大火(huǒ )煮开(kāi )后转中火。煮到水快熬(áo )干的时候加入盐(yán ),翻(fān )炒(chǎo )均匀稍收(shōu )汁时(shí )盖上(shàng )锅盖焖。
