做法:春笋(sǔn )切成片后加少许盐捞出(chū )后用清(qīng )水浸(jìn )泡,生姜切片,葱切成段。锅烧(shāo )热,倒入2勺油,放入生姜、春笋、牛肉片、葱(cōng )段翻(fān )炒1分(fèn )钟左右。再(zài )加入(rù )生抽、老抽(chōu )、蚝油(yóu )翻(fān )炒均(jun1 )匀,加入少量清水半掩住春笋,盖(gài )上(shàng )锅盖大(dà )火煮开后转中火。煮到(dào )水快熬干的时候加入(rù )盐,翻炒均匀稍收汁时盖上锅(guō )盖焖。
