做法:春笋(sǔn )切成片后加少许盐捞出(chū )后用清水浸泡,生姜切片,葱切成(chéng )段。锅(guō )烧热,倒(dǎo )入2勺油,放(fàng )入生姜、春笋、牛肉片、葱段(duàn )翻炒1分钟(zhōng )左右。再(zài )加(jiā )入生(shēng )抽、老抽、蚝(háo )油翻炒均匀,加入(rù )少量清水半掩住春笋,盖(gài )上锅盖大(dà )火(huǒ )煮开后转中火。煮到水快熬干的时候加入盐,翻炒均匀(yún )稍收汁时盖上(shàng )锅盖焖。
