做法(fǎ ):春笋切成片(piàn )后加少许盐捞出后用清(qīng )水浸泡,生(shēng )姜(jiāng )切片(piàn ),葱切成段。锅烧热,倒(dǎo )入2勺油,放入生姜、春笋、牛肉(ròu )片、葱段翻炒1分(fèn )钟(zhōng )左右。再加入(rù )生抽(chōu )、老抽、蚝油翻炒均匀,加入少量清水半掩住春笋(sǔn ),盖上(shàng )锅盖(gài )大火煮开后转中火。煮到水快熬干的时候加(jiā )入盐,翻炒均(jun1 )匀稍收汁(zhī )时盖上锅盖(gài )焖。
