做法:春笋切(qiē )成片后加少许盐捞出后用(yòng )清水浸泡,生姜切片,葱切成段。锅烧热,倒(dǎo )入(rù )2勺油(yóu ),放入生(shēng )姜、春笋、牛肉片、葱段翻炒1分钟左右。再加入生抽、老抽、蚝油(yóu )翻(fān )炒均匀,加入少量清(qīng )水半掩住(zhù )春笋,盖(gài )上锅盖大火煮(zhǔ )开后转(zhuǎn )中(zhōng )火。煮到(dào )水快熬干的时(shí )候加入盐,翻炒(chǎo )均匀稍收汁时(shí )盖上锅盖(gài )焖。
