做(zuò )法:春笋切成片后加少许盐(yán )捞出后用清(qīng )水浸泡,生姜切(qiē )片,葱切成段。锅(guō )烧热,倒(dǎo )入2勺油,放入(rù )生姜、春笋、牛肉片、葱段翻炒1分钟左(zuǒ )右。再加入生抽、老抽、蚝油翻炒均匀(yún ),加入少量清水半掩住春笋,盖上锅盖大火(huǒ )煮(zhǔ )开后(hòu )转中(zhōng )火。煮(zhǔ )到水快熬干的时(shí )候加入(rù )盐(yán ),翻(fān )炒均匀稍收汁时盖上(shàng )锅(guō )盖焖。
