做法:春笋切成(chéng )片后加少许盐捞(lāo )出后用清水浸泡,生姜(jiāng )切片,葱切(qiē )成段。锅烧热,倒入(rù )2勺油,放入生姜、春笋、牛肉(ròu )片、葱段翻炒1分(fèn )钟左右。再加入生(shēng )抽、老抽、蚝油(yóu )翻炒均匀(yún ),加入少量清水(shuǐ )半掩住春(chūn )笋,盖上锅盖大火煮开后转中火。煮到水快熬干的时(shí )候加(jiā )入盐,翻(fān )炒(chǎo )均匀稍收汁时盖上锅盖(gài )焖。
