做(zuò )法:洗净(jìng )宰好鲫鱼,洗净淮山和薏(yì )米。用清(qīng )水把陈(chén )皮泡软,拍裂一小块姜,热锅,用姜(jiāng )块(kuài )在锅上擦一遍,放两勺油,待油六成(chéng )热下鱼(yú ),煎至微黄(huáng )。煮沸瓦煲里(lǐ )的清水,放入煎煮(zhǔ )好的鲫鱼和(hé )其(qí )他(tā )材料,武火煮(zhǔ )沸,转中(zhōng )小火煲一个半小时,下盐调(diào )味即可品尝。
