做法:春笋切成(chéng )片后加少许(xǔ )盐(yán )捞出后用清(qīng )水浸泡(pào ),生姜切片,葱切成段。锅烧热,倒(dǎo )入2勺油,放入生姜、春笋、牛(niú )肉片、葱段(duàn )翻炒1分钟左右。再加(jiā )入生(shēng )抽、老抽、蚝油翻炒均(jun1 )匀,加入少(shǎo )量清水(shuǐ )半掩住(zhù )春笋,盖上(shàng )锅盖大火煮开后转中火。煮到(dào )水快熬干的时候加入盐,翻炒均匀稍收汁时(shí )盖上(shàng )锅盖焖。
