做(zuò )法:春笋切成片(piàn )后加少许(xǔ )盐捞出后用清水浸泡,生姜切(qiē )片,葱切成(chéng )段。锅烧(shāo )热,倒入2勺(sháo )油,放入生姜、春(chūn )笋、牛肉片、葱段翻炒1分钟(zhōng )左右。再加入(rù )生(shēng )抽、老抽、蚝油翻炒均匀(yún ),加(jiā )入少量清水半掩住春笋,盖上锅(guō )盖大火煮开后转中(zhōng )火。煮到水快熬干的时候(hòu )加入盐,翻炒(chǎo )均匀(yún )稍收汁时盖上锅盖焖。
