做(zuò )法:春笋切成片后加少许(xǔ )盐(yán )捞出后用清水(shuǐ )浸泡,生姜(jiāng )切(qiē )片(piàn ),葱(cōng )切成段(duàn )。锅烧热,倒入2勺油,放(fàng )入生姜、春笋、牛肉片、葱段翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒均匀,加(jiā )入少量清水半掩住(zhù )春(chūn )笋(sǔn ),盖上锅盖大火煮开后转中(zhōng )火。煮(zhǔ )到水快熬干(gàn )的时候加入盐,翻炒(chǎo )均匀稍收汁时盖上锅盖焖。
