做(zuò )法:春(chūn )笋切成片后加少许盐(yán )捞(lāo )出后(hòu )用清(qīng )水浸泡,生姜(jiāng )切片,葱切成段。锅烧热,倒入2勺(sháo )油(yóu ),放(fàng )入生姜(jiāng )、春笋、牛肉片、葱段翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒均匀,加入少量清水半掩住(zhù )春笋,盖上锅盖大火煮开(kāi )后转(zhuǎn )中火(huǒ )。煮到(dào )水快熬干的时候加(jiā )入盐,翻炒均(jun1 )匀稍收汁时盖上(shàng )锅盖焖。
