做(zuò )法(fǎ ):春笋切成片后加少许盐捞出后用清水浸泡,生姜(jiāng )切(qiē )片,葱切成段。锅烧(shāo )热(rè ),倒(dǎo )入2勺油,放入生(shēng )姜、春笋、牛肉(ròu )片(piàn )、葱段翻炒1分钟左右。再(zài )加入生抽、老抽(chōu )、蚝油翻炒均匀,加入(rù )少量(liàng )清水半掩住春笋,盖上锅盖(gài )大火煮开后转中火。煮到水快熬(áo )干的时候加(jiā )入盐(yán ),翻炒均匀(yún )稍收汁时盖上锅盖(gài )焖。
