做(zuò )法:春笋(sǔn )切成(chéng )片后加(jiā )少(shǎo )许(xǔ )盐捞出后用清(qīng )水(shuǐ )浸泡(pào ),生姜切片,葱切成段。锅烧热,倒入2勺油,放(fàng )入生姜、春笋、牛肉片、葱段翻炒1分钟(zhōng )左右。再加入生抽、老(lǎo )抽、蚝油翻炒均匀,加入少量清水半掩住春笋,盖上(shàng )锅盖大火煮(zhǔ )开后转中火。煮到水快(kuài )熬干的时(shí )候加入盐(yán ),翻炒均匀(yún )稍收(shōu )汁时盖上锅盖焖。
