做法:春笋(sǔn )切成片后加(jiā )少许盐捞出后用清水浸泡,生姜切片,葱切成段。锅烧热(rè ),倒(dǎo )入(rù )2勺油,放入(rù )生姜、春(chūn )笋、牛肉片、葱段翻炒1分(fèn )钟左右(yòu )。再(zài )加入生抽、老抽、蚝油翻炒均匀,加入少量清水(shuǐ )半掩住(zhù )春笋,盖上锅盖大火煮(zhǔ )开(kāi )后转中火。煮到水快熬干的时候加入盐,翻(fān )炒均匀稍(shāo )收汁时(shí )盖上(shàng )锅盖焖。
