做(zuò )法:春笋切成片后加(jiā )少许盐捞出后用清(qīng )水浸泡,生姜切片(piàn ),葱切成段(duàn )。锅烧热(rè ),倒(dǎo )入2勺(sháo )油,放入(rù )生姜、春笋、牛肉片、葱段翻炒1分钟左右。再加入生抽(chōu )、老(lǎo )抽、蚝油翻炒均(jun1 )匀,加入少(shǎo )量清水半掩住春笋,盖上锅盖大火煮开后(hòu )转中火。煮到水(shuǐ )快熬干的时候加入盐,翻炒均匀稍收汁时盖(gài )上锅盖焖。
