做(zuò )法:春笋切成片(piàn )后加少(shǎo )许盐捞出(chū )后用清(qīng )水浸(jìn )泡,生姜切片,葱切成段。锅烧热,倒入2勺油,放入生姜、春笋、牛肉片(piàn )、葱(cōng )段翻炒1分钟(zhōng )左右。再加入生(shēng )抽、老抽、蚝油翻(fān )炒均匀,加入少量清(qīng )水半掩住春(chūn )笋,盖上锅盖大(dà )火煮开后转中火。煮到(dào )水快(kuài )熬干的时候加入(rù )盐,翻炒均匀稍收汁时盖上锅盖焖。
