做法:春笋切成片(piàn )后加少许(xǔ )盐捞出后用清水浸泡(pào ),生姜切片,葱切(qiē )成(chéng )段。锅烧热,倒入2勺(sháo )油,放入生姜、春笋、牛肉片、葱段(duàn )翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒(chǎo )均匀,加入少量(liàng )清水(shuǐ )半掩(yǎn )住春笋,盖(gài )上锅盖大(dà )火煮开(kāi )后转中火。煮到水快熬(áo )干的时(shí )候加入盐,翻(fān )炒均匀稍收汁时盖上(shàng )锅盖焖。
