做法:春笋切成片后加少许(xǔ )盐捞出(chū )后用清水浸泡,生姜(jiāng )切片(piàn ),葱切成段。锅烧热,倒入2勺油,放入生姜、春笋(sǔn )、牛肉片、葱段翻(fān )炒1分钟左右。再加(jiā )入(rù )生抽、老抽(chōu )、蚝油翻炒均(jun1 )匀,加入少量清水半掩住春笋,盖上(shàng )锅(guō )盖大火煮开后转中火。煮(zhǔ )到(dào )水快(kuài )熬干的时候(hòu )加入盐,翻炒(chǎo )均匀稍收(shōu )汁时盖(gài )上锅(guō )盖焖。
