做(zuò )法:春笋切(qiē )成片后(hòu )加少许(xǔ )盐捞出后用清水浸泡,生(shēng )姜切片,葱(cōng )切成段。锅烧热,倒入(rù )2勺油,放入生(shēng )姜、春笋、牛(niú )肉片、葱段翻炒1分钟左右。再加入生抽、老抽、蚝油翻(fān )炒均匀,加(jiā )入少量清(qīng )水半掩住春笋,盖上(shàng )锅盖大火煮(zhǔ )开(kāi )后转中火。煮到水(shuǐ )快熬干的时候加入盐,翻炒均匀(yún )稍收(shōu )汁时盖上锅盖焖。
