做法:洗(xǐ )净宰好鲫鱼,洗净淮山和薏米。用清水把陈(chén )皮泡软,拍裂一小块姜,热锅(guō ),用(yòng )姜(jiāng )块在锅上擦一遍,放两勺油,待油六成(chéng )热下鱼,煎(jiān )至微黄(huáng )。煮(zhǔ )沸瓦(wǎ )煲里的清(qīng )水,放(fàng )入煎煮好(hǎo )的鲫鱼和其他材(cái )料,武火煮沸,转(zhuǎn )中小(xiǎo )火煲一个(gè )半小时,下盐调味即可品(pǐn )尝。
