做法:春笋(sǔn )切成片后加少许盐捞出后用清水浸泡,生姜(jiāng )切片,葱切成段。锅烧热(rè ),倒入2勺油,放(fàng )入生姜(jiāng )、春笋、牛肉片、葱段(duàn )翻(fān )炒(chǎo )1分钟左右。再加(jiā )入生抽、老抽、蚝油翻炒(chǎo )均匀(yún ),加入少(shǎo )量清水(shuǐ )半(bàn )掩住春笋,盖上锅盖(gài )大火煮开后转中(zhōng )火。煮到水快熬干的时候加(jiā )入盐,翻炒均(jun1 )匀稍收汁时盖上锅盖焖。
