做法:春笋切成片后加(jiā )少许(xǔ )盐捞出后用清水浸泡,生姜切片,葱切成段(duàn )。锅烧热,倒入2勺油,放入生姜、春(chūn )笋、牛肉片、葱段翻炒1分钟左右。再(zài )加入生抽、老抽(chōu )、蚝(háo )油翻炒均匀,加入少(shǎo )量清(qīng )水半(bàn )掩(yǎn )住春笋,盖上锅盖大(dà )火煮开后转中火(huǒ )。煮到水快熬干的时(shí )候加入盐(yán ),翻炒均匀(yún )稍收(shōu )汁(zhī )时盖上锅(guō )盖焖。
