做(zuò )法:春笋切成片后加(jiā )少许盐捞出后(hòu )用清水浸泡,生姜切片,葱切成段。锅(guō )烧热,倒入2勺油,放入生(shēng )姜(jiāng )、春(chūn )笋、牛肉片(piàn )、葱段(duàn )翻炒1分(fèn )钟左右。再加入生抽(chōu )、老抽、蚝油翻炒均匀,加入少量清水半掩(yǎn )住春笋,盖上锅盖大火煮开后转中(zhōng )火。煮到水快熬干的时候加入盐,翻炒均匀稍收汁时(shí )盖上(shàng )锅(guō )盖焖。
