做(zuò )法:春笋切成片(piàn )后加少许盐捞出后用清水浸(jìn )泡,生姜(jiāng )切(qiē )片(piàn ),葱切成段。锅烧热(rè ),倒入2勺油(yóu ),放入生姜、春笋、牛肉片、葱段翻炒1分钟(zhōng )左(zuǒ )右。再加入(rù )生抽、老抽、蚝油(yóu )翻炒均匀,加入少量清(qīng )水(shuǐ )半掩住春笋,盖上锅盖大火煮(zhǔ )开后转中火。煮到水快熬干的时候加入盐,翻(fān )炒均匀稍收汁时盖上(shàng )锅盖焖。
