做法(fǎ ):春笋切(qiē )成片后加(jiā )少许盐(yán )捞出后用清水浸泡,生(shēng )姜(jiāng )切片,葱切成(chéng )段。锅烧热,倒入(rù )2勺油(yóu ),放入(rù )生姜、春笋、牛(niú )肉片(piàn )、葱段翻(fān )炒1分钟左右。再加入生抽、老抽、蚝油翻炒均匀,加入少量清水半掩(yǎn )住春笋,盖上锅盖大火煮开后转中火。煮到水快熬(áo )干的时候(hòu )加入盐,翻炒均(jun1 )匀稍收汁时(shí )盖(gài )上锅(guō )盖焖。
