做法(fǎ ):春笋切(qiē )成片后加少许盐捞出后用清水浸泡,生姜(jiāng )切片,葱切成(chéng )段。锅(guō )烧热,倒入2勺油,放入(rù )生姜、春笋、牛(niú )肉片、葱段(duàn )翻炒1分钟(zhōng )左右。再加入生抽、老抽、蚝油翻炒均匀,加入少量清水半(bàn )掩住(zhù )春笋,盖上锅(guō )盖大火煮(zhǔ )开后转中火。煮(zhǔ )到(dào )水快熬干的时候加入盐,翻炒均匀(yún )稍(shāo )收汁(zhī )时盖上锅盖焖。
