做(zuò )法:春笋切成片后加少(shǎo )许盐捞出后用清水浸泡,生(shēng )姜切片,葱切成段。锅烧热,倒(dǎo )入2勺油,放入生(shēng )姜、春笋、牛肉片、葱(cōng )段翻炒1分钟左右(yòu )。再加入(rù )生抽、老抽、蚝油翻炒均匀,加入少量清水半掩(yǎn )住春笋,盖上(shàng )锅盖大火煮开后转(zhuǎn )中火。煮到水快熬(áo )干的时候加入(rù )盐(yán ),翻(fān )炒均(jun1 )匀稍(shāo )收汁时盖上(shàng )锅(guō )盖焖(mèn )。
