做法:春(chūn )笋切成片后加少(shǎo )许盐捞(lāo )出后用清水浸泡,生姜切片(piàn ),葱切成段。锅烧热(rè ),倒入2勺(sháo )油(yóu ),放入生姜、春笋、牛(niú )肉片、葱段(duàn )翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒均匀(yún ),加入少量清水半(bàn )掩(yǎn )住春笋,盖上锅盖大火煮开后转中火。煮到水快熬(áo )干的时(shí )候加入盐,翻(fān )炒均匀稍收汁(zhī )时盖上锅盖焖。
