做法:春笋切成片后加少许盐捞(lāo )出(chū )后用清水浸泡,生姜切片,葱切成段。锅烧热(rè ),倒入2勺油,放(fàng )入(rù )生姜、春笋、牛肉片、葱段翻(fān )炒1分钟(zhōng )左右(yòu )。再加入(rù )生抽、老抽、蚝油翻炒均匀,加(jiā )入少量清水(shuǐ )半掩住春(chūn )笋,盖上锅盖大火煮开后转中火。煮到水快熬干的时(shí )候加入(rù )盐,翻(fān )炒(chǎo )均匀(yún )稍收汁时盖上锅(guō )盖焖。
