做(zuò )法:春笋切成片(piàn )后加少(shǎo )许盐捞出后用清水浸泡,生姜(jiāng )切片,葱切成段(duàn )。锅烧热,倒入2勺油,放入生(shēng )姜、春笋、牛肉(ròu )片、葱段翻炒1分钟(zhōng )左右。再加入生(shēng )抽、老(lǎo )抽、蚝(háo )油翻炒均匀,加(jiā )入少量清水半掩住春(chūn )笋,盖(gài )上锅盖大火煮开后转中火。煮到(dào )水快熬干的(de )时候加(jiā )入盐,翻炒均匀(yún )稍收汁时盖上锅盖(gài )焖。
