做法:春笋切(qiē )成片后加少许(xǔ )盐(yán )捞出后用清水浸泡(pào ),生姜切片,葱切成段。锅烧(shāo )热(rè ),倒入2勺油,放入生姜、春笋、牛肉片、葱段翻炒1分钟左右。再(zài )加(jiā )入生抽、老抽、蚝(háo )油翻炒均匀,加(jiā )入少量清水(shuǐ )半掩住春(chūn )笋,盖上(shàng )锅盖大火煮(zhǔ )开后转中火。煮到水快(kuài )熬(áo )干(gàn )的时候加入盐,翻炒(chǎo )均匀(yún )稍收汁时盖上锅盖焖。
