做法:春笋切成片(piàn )后(hòu )加少许盐捞出后用清水浸泡,生姜切片,葱切成(chéng )段。锅烧热,倒(dǎo )入2勺(sháo )油,放入生姜、春(chūn )笋、牛肉片、葱段翻(fān )炒(chǎo )1分钟左右。再加(jiā )入生抽、老抽(chōu )、蚝(háo )油翻炒均匀,加(jiā )入(rù )少量清水半(bàn )掩住春笋,盖上锅盖大火(huǒ )煮开后转中火。煮到水快熬干的时(shí )候(hòu )加入盐,翻炒均匀稍收汁时盖上(shàng )锅盖(gài )焖。
