做法(fǎ ):春笋切成片后加(jiā )少(shǎo )许盐(yán )捞出后(hòu )用清水浸泡,生姜切片,葱切成段(duàn )。锅烧热,倒入2勺油(yóu ),放入(rù )生姜、春笋、牛(niú )肉(ròu )片、葱段翻炒1分钟(zhōng )左右。再加入生抽、老抽、蚝油翻炒均(jun1 )匀,加入少量清(qīng )水半掩住春笋,盖上(shàng )锅盖大火煮开后转(zhuǎn )中火。煮到(dào )水快熬干的时候加入盐,翻(fān )炒(chǎo )均匀稍收汁时盖(gài )上锅盖(gài )焖。
